I used to love ordering bruschetta as an appetizer from restaurants or snacking on it while at a party, but realized in the past year that I hadn’t eaten it because they always serve it with bread. The other day I was really having a craving for bruschetta and since I had a few packages of Jilz Gluten Free Crackers in the pantry, I made a fresh homemade batch that satisfied all my cravings. No joke, we ate the whole bowl of bruschetta in one sitting and I’m already planning on getting the ingredients again the next time I’m at the market.

I’ve realized with a lot of signature foods, I like to stick with the classic recipe. This goes for grilled cheese, pizza and so forth. Give me the tried & true and I’m a happy girl. I don’t need fancy concoctions with the latest and greatest ingredients, I just need a really good, simplistic recipe and that’s what this bruschetta is.

Classic Tomato Bruschetta with Gluten Free Crackers

Prep Time: 10 minutes

Cook Time: 3 hours

Total Time: 3 hours, 10 minutes

A delicious classic bruschetta with Roma tomatoes marinated in olive oil, basil and garlic.

Ingredients

  • 4 medium Roma tomatoes (chopped)
  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp minced garlic
  • 1 tsp fresh ground black pepper
  • 1 tsp fine sea salt
  • 1 tsp cane sugar
  • 1 tbsp chopped basil

Instructions

  1. Chop roma tomatoes and place in medium size mixing bowl.
  2. Add olive oil, balsamic vinegar, garlic, pepper, salt and sugar to the mixing bowl and stir gently.
  3. Let marinate in the fridge for 2-3 hours. Do not drain excess liquid.
  4. Serve chilled with gluten free crackers or on top of sliced focaccia bread.

For those of you who eat a gluten free dietary lifestyle, you absolutely must try Jilz Crackers. Dipping her crispy tuscan seasoned crackers into this bruschetta made me forget that I was craving the focaccia bread that is commonly served with this appetizer. I find them at my local Whole Foods here on the west coast, but you can always purchase them online via their website as well. Let me know if you’ve tried them!
