I have this weird love/hate relationship with tuna, but as of lately I’m totally craving a cranberry tuna medley that makes the perfect sandwich. At my neighborhood Whole Foods, they sell a cranberry tuna recipe from their deli section for $11.99 a pound. I’ve fallen for it numerous times without regret, but since we’re trying to pinch a few pennies before our Italy trip I thought I would try to replicate the recipe at home. For only approximately $12.00 you can you get a can of tuna, a loaf of gluten free bread, a jar of paleo mayo (it’s gluten and dairy free) and a bag of dried cranberries. Which means, you can purchase 5 more cans of tuna and for $20 you can make 12 sandwiches.
Unfortunately for Whole Foods, I won’t be purchasing their cranberry tuna recipe anymore because this recipe is so simple, tastes just as good and is a fraction of the cost.
If you are looking for a carb free option, try spooning the cranberry tuna recipe over sliced cucumbers for a light lunch or snack. Hope you enjoy it as much as I do!
