This easy recipe for sweet potatoes calls for 5 minutes of prep work and then you let the crockpot do the rest of work!
Lately, I have a serious obsession with sweet potatoes. I will enjoy them morning, noon or night and what seems like every which way. They’re perfect in breakfast skillets with an over-easy egg on top, half of one at lunch with leftover protein from dinner the night before or served up with butter and coconut sugar for a tasty side dish in the evening.
You can certainly slice up a sweet potato and roast them in the oven for 45 minutes, or you can do a few minutes of prep work in the morning and let your crockpot slow cook them for 8 hours where they’ll turn out absolutely perfect. I have been making a batch of sweet potatoes like these every Monday to have for the week ahead. They’re really great the night of, but taste just as good reheated for quick & easy meals.
Last night we enjoyed our sweet potatoes with leftover crockpot chicken from a few days ago and topped with avocado for a really yummy dinner. Today, I’ll enjoy one for lunch with my usual vegan butter & sprinkle (more like heavy spoonful) of coconut sugar. I could eat that all day, every day. Don’t knock it till you try it!
Here are the step-by-step instructions to easy crockpot sweet potatoes —
Step 1 : After scrubbing the sweet potatoes, sprinkle with cinnamon.
Step 2 : Wrap the sweet potatoes with a damp paper towel.
Step 3 : Cover the sweet potatoes with a large piece of tin foil. Tuck the edges in and roll (like at Subway).
Step 4 : Add 1 inch of water to the bottom of the crockpot. Place the wrapped sweet potatoes in and cover with the lid.
Step 5: Set the crockpot to a slow cook of 8 hours on low.
Step 6 : Slice the sweet potato in half and then score in a criss-cross pattern. Place slices of (vegan) butter on top that will will melt between the cuts and top with a sprinkle of coconut sugar.
This is truly the fastest, simplest way to make sweet potatoes with all the work being done inside the crockpot while you’re at work. We all don’t have time to make an elaborate meal every night, but by making a batch of these at the beginning of the week, you’ll have a good chunk of your meal already done!
