A gluten free and dairy free delicious twist on a class rice krispie treat with a topping of our favorite fireside s’mores.
When I saw Emily from Cupcakes & Cashmere post a photo of her S’mores Rice Krispie bars I immediately got to brainstorming how I could make these fit my gluten free and dairy free lifestyle. There is so much gooey goodness that makes up a rice krispie bar and then you add the delicious toasted marshmallow, chocolate and graham cracker components of a s’mores and it’s bound to be insanely good!
Since I was back in Wisconsin at my parents house freezing my tush off in 3• temperatures, I thought this would be the perfect cozy day, lay on the couch in front of the TV type of treat. My family is very supportive of my dietary lifestyle and I knew they probably wouldn’t even question that I somehow made these s’mores rice krispie bars in a version that would fit my needs yet taste good. They trust my baking skills ever since they can’t get enough of my gluten & dairy free no-bake cherry cheesecakes!
In order to make these gluten free and dairy free, it’s a simple substitution of some key ingredients and you’re good to go! P.S. I find all these ingredients at Whole Foods.
Needless to say, this entire pan of s’mores rice krispie bars were gone in less than 24 hours and I won over the hearts and stomach of my family again! I loved the gooey marshmallows inside the krispie bar itself, but the toasted ones on top really took this treat to a whole new level. Though this recipe might not fit with everyone’s “healthy” New Years resolutions, it is worth the splurge!
