I have become somewhat obsessed with chia seed pudding. Skeptical at first and easily converted after my first bowl. I’m sure many of you are wondering what the heck does chia seed pudding taste like and how can those tiny little balls of whole grain become a pudding consistency?

Let’s first start with the health benefits from consuming chia seeds. They are one of the healthiest foods on the planet and contain a plethora of vital nutrients including omega-3 essential fatty acids, protein, fiber, iron, potassium, calcium and more. All these benefits make for the perfect little additive to any meal or drink for the added nutritional value.

When the chia seeds are combined with the homemade almond milk, they slowly begin to absorb the liquid, soften and expand in size. The end result is a creamy mixture that pairs perfectly with an assortment of fruit. I tend to favor the addition of pomegranate seeds and if I have additional berries on hand, I through them in too. I always toss in a handful of cacao nibs for a touch of crunch and their added nutritional value. I’m here to tell you though, you can add whatever combination of fruit that appeases you and you can’t go wrong!

Gourmet Chia Seed Pudding

Prep Time: 5 minutes

Cook Time: 4 hours

Total Time: 4 hours, 5 minutes

A delicious, healthy alternative to breakfast or a snack. Top with your favorite fruit combinations.

Ingredients

  • 3 tbsp organic chia seeds
  • 1 cup homemade almond milk
  • 1/4 tsp pure vanilla extract
  • dash of sea salt
  • 1/4 tsp maple syrup (optional)

Instructions

  1. In a bowl or large jar, combine the chia seeds, almond milk, vanilla and salt.
  2. Stir and place in the fridge.
  3. Let chill 3-4 hours minimum, stirring throughout.
  4. Note - I use vanilla almond milk therefore do not need the extra sweetener. Utilize the maple syrup if using plain, unsweetened almond milk.
