We are into week 2.5 of my healthy living challenge & I wanted to share with you a healthy breakfast option with paleo pancakes. A person can only eat so many eggs, bacon, protein smoothies and açai bowls. Besides, when the weekend rolls around who doesn’t crave a stack of pancakes? To keep it healthy, I started making these paleo pancakes from Birch Benders.
I can’t take credit for finding this paleo pancake mix, that I have to give to my oldest brother, Brent. Him and his wife started eating a paleo diet at the beginning of the year and my brother dropped 30+ pounds in just 2 months! While I’m not eating a 100% paleo diet, I am incorporating recipes throughout the week and since I already eat gluten free and dairy free, it’s been a pretty easy adjustment.
The favorite thing about this paleo pancake mix is that all I need to add is water, give it a mix and it’s ready to cook. Besides it being super easy to make, it has wholesome ingredients like cassava flour, organic coconut flour, almond flour, eggs, leavening, salt, monk fruit and spices.
My brother raved about these paleo pancakes & was even able to get a monster bag from his Costco. Unfortunately my local Costco doesn’t carry it so I order bags from Thrive Market. Instead of being $6.49 a bag, it’s only $4.99 a bag and you can get multiple breakfasts from just one bag.
While writing this post I also saw that Birch Benders has a pumpkin spice paleo version and are going to be releasing a frozen paleo waffle version! As you can see from the photo above, we stocked up on our paleo pancake mix because we love them so much. Hey, when you spot a good thing at a good price, you go for it!
