With Thanksgiving just a few days away where we’ll be indulging in savory stuffing, fluffy mash potatoes and decadent pumpkin pies I thought it would be a great time to have Aisha from The Middle of Here pop over to share her healthy, homemade recipe for cauliflower hummus. I was lucky enough to try it this summer & I’ve been begging her for the recipe ever since.

Hey guys, it’s Aisha! Thanks for having me back & I’m so excited to share this recipe with you! With a Middle Eastern heritage, there’s nothing I love more than a good homemade hummus. Particularly my dad’s, which I love equally for it’s flavorful taste and nostalgic sentiment. I’ve tried many-a-hummus in my day, and while I used to stock up on Trader Joe’s hummus in my college years, I’ve since adopted a more paleo approach to eating. Don’t get me wrong, I won’t shy away from a chickpea hummus, but I can’t deny that I don’t always feel my best after eating legumes.

When I found this cauliflower hummus recipe I decided to give it a go since it was so simple and I was looking for a good snack to keep on hand. The results far exceeded my expectations; I could hardly believe how similar it was in taste and consistency. All I simply added was a touch of paprika and garnished it with cilantro.  It’s the perfect departure from your standard chickpea hummus. I like to enjoy it with crudités or on a sandwich with tomato, cucumber, red onion and sprouts.

Homemade Cauliflower Hummus

Homemade Roasted Cauliflower Hummus with paprika and cilantro garnishment.

Recipe adapted from Oh My Veggies.

Ingredients

  • 1 head of cauliflower, broken into florets
  • 1 clove of garlic
  • 1/3 cup tahini
  • 2 tbsp fresh lemon juice
  • 2 tbsp olive oil
  • 1/2 tsp of paprika
  • salt + pepper, to taste
  • cilantro, finely chopped
  • fresh veggies + pita bread for dipping

Instructions

  1. Preheat oven to 400°. Line rimmed baking sheet with parchment paper.
  2. Place cauliflower florets on baking sheet. Drizzle with olive oil. Roast for 40 minutes, flip the florets halfway through cooking time. Remove from oven and cool.
  3. Combine cauliflower, garlic, tahini, lemon juice, olive oil, paprika, salt and pepper in food processor. Process until smooth.*If looking for a thinner consistency, add one tablespoon of water at a time.
  4. Spoon hummus mixture into a bowl and garnish with additional drizzle of olive oil and chopped cilantro.
  5. Serve with freshly chopped vegetables and pita bread.
