Quick and easy meals are my kind of jam lately and this healthy, delicious miso glazed shrimp over cabbage slaw certainly fits the bill. Lately it seems I’m obsessed with any dish that gets served with shrimp. Besides the countless ways to serve it, shrimp cook in less than 6 minutes so meals are quite literally “quick.”
We wanted to break away from our go-to cast iron barbecue shrimp and opt for a creating a meal with an Asian flare. I’ve ordered miso glazed fish at restaurants and absolutely loved it so I whipped up my own glaze at home with a few simple ingredients and plated the shrimp over a bed of marinated cabbage slaw for dinner. It was so delicious and I love the flavor of the creamy glaze with a hint of sweet and salty.
I typically prefer to drink a crisp white wine when eating seafood, especially shellfish. Whether it’s traditionally correct or not, a lighter meals fares well with a lighter wine. I loved the miso glazed shrimp with the Cambria Benchbreak Chardonnay. It’s got just enough of a fruit taste but finishes really clean and refreshing.
What’s really great about this recipe is that you can prep this a few hours or even a day in advance if you really want to enhance the flavors. Let the shrimp and cabbage marinate (separately) in the miso glaze and when you’re ready to eat simply fire up the skillet and you’re ready to go!
