Has anybody else had an addiction to peanut butter where they’d find themselves sitting on the couch with just a spoon and a jar of PB and happy as can be? I remember that was my staple during the college days. I even omit the J in a PB & J.
Although I still have a serious love for peanut butter, I don’t spoon it into my mouth anymore but rather look for ways to use it in recipes. I keep seeing posts on Pinterest for these delicious looking no-bake energy bites. After browsing quite a few recipes, I decided to whip some up since they all said it took only 10 minutes to create.
This recipe was inspired by Creative Juice, it’s just that mine is lacking all the “energy” and “healthy” components! (whoops, maybe next time!) I’ll be honest, I wanted to make these but didn’t want to have to go on a separate trip to the market for it to happen. So I went with what ingredients I already had in the house.
Holy delicious! I purposely left some of the “batter” in the bowl to just spoon into my mouth because it was that good. There is nothing really bad for you in these bites (if you stick to using dark chocolate chips) and they’re perfect for grabbing on the go as a quick snack. I’m hooked and so is my entire family! So much so… I make a fresh double batch every week.
PEANUT BUTTER OATMEAL BITES
yield 18-20 bites
2 cup oats
1 cup peanut butter
1 cup semi-sweet or dark chocolate chips
2/3 cup raw honey
2 tsp vanilla
2 tbsp flaxseed
2 tbsp chia seeds
Combine all ingredients in a large mixing bowl.
Set in refrigerator for 30+ minutes to allow the mixture to firm slightly. The longer it chills, the easier it is to roll into balls.
Roll the mixture into 1 inch rounds and place in storage container lined with parchment paper and transfer to refrigerator.
