In my eyes, once June hits it’s officially the start of summer! I’m typically not a big salad eater, but I do love a cobb salad as a light & healthy lunch or dinner option when it starts to get warm out. Instead of typically adding chicken, I swapped it out for spicy grilled salmon. The flaky pieces of salmon with just the right about of spice balanced well with the leafy greens, roasted corn, egg, tomato and homemade vinaigrette dressing.
Now that the warmth and sunshine is here to stay, I typically reach for a bottle of chilled white wine and I love the Cambria Benchbreak Chardonnay because it pairs so well recipes we make around the kitchen. The lively fruit aromas with the clean, crisp finish worked so well up against the spicy grilled salmon cobb salad. I picture many afternoons or early evenings out on the patio with this meal and wine combo!
