I’m saying “Good Morning” with my vegan açai bowl to ensure a healthy, active, productive day ahead.
A delicious, healthy good morning breakfast is sure to get your day started off right. As someone who works from home, I have found it to be imperative to do the little things throughout the day so that I have energy and the ability to focus from first thing in the morning all the way through the dreaded afternoons.
Allow me to walk you through a bit of my morning routine & share with you a delicious vegan açai bowl recipe that has become my favorite for breakfast.
I am pretty diligent about setting an early alarm to rise out of bed around 6:00am (this was much easier before daylight savings time!). I usually either head straight to the gym for 30-45 minutes of cardio or do a total body toning workout right in my living room. By this time Dexie, my Golden Retriever, is anxious to get her own exercise and we head out for a 1-2 mile walk.
I immediately make a fresh green juice and head upstairs to shower and get ready for the day. I try to be back downstairs between 8:00-8:30 so I can make a healthy breakfast and be at my desk to start my work day by 9:00. I’ve come to realize that I work much better with a routine and to treat my day as if I was at an office, therefore I try not to arrive to work late!
Lately, my favorite breakfast meal has been a vegan açai bowl that is so delicious I can’t believe it’s actually healthy for me! I ordered one not too long ago at Whole Foods, loved it, and instead of paying $7.00-$9.00 each morning for their version, I set out to make a vegan açai bowl at home and even add more yummy goodness. The base of the recipe, which is the açai smoothie mixture stays constant while I change up the toppings for whatever is in stock via my fridge and pantry.
I try to keep plenty of assorted berries on hand as well as hemp seed in place of granola, bee pollen for extra health benefits and a sprinkle of cacao nibs. You end up getting everything you love about smoothies but with a little extra boost that keeps you feeling full until lunch time.
