Sweet Potato and Sausage Hash

For the past 2 months we’ve been enjoying a healthy, paleo inspired breakfast with this sweet potato and sausage hash recipe in the mornings (often times with a fried egg on top).

It was introduced to me on our ski trip back in January by my brother’s girlfriend, Tessie, who made it for the whole group one morning. Like I mentioned above, I typically enjoy it with a fried egg on top and love when the yolk smothers the sweet potato. When you’re in a rush or simply not feeling the egg, the breakfast hash is just as yummy by itself or topped with some sliced avocado. What I love most about this sweet potato and sausage hash recipe is that it makes a lot of food. I’ll make it on a Sunday morning and get to enjoy it for another 3-4 days throughout week for breakfast (and sometimes lunch). It’s the perfect meal-prep Sunday recipe.

All together, I’ve been on a really big sweet potato kick. I know it’s a conflicted issue in the paleo world if they should be allowed on the diet or not because of the natural sugars, but since I’m only dabbling in paleo recipes, I definitely don’t adhere to that rule.  I think by adding the turkey sausage it boosts the protein and creates a more balanced meal (though I do stick in a few more pieces of sweet potato when I’m plating for myself). For me, I love it because it’s naturally gluten free and dairy free!

I’m planning on sharing in an upcoming post how I order my groceries online, but every week on my list is sweet potatoes, yellow onion, 1 pound of turkey sausage and avocado. Honestly, we’ve eaten this for dinner a few times as well but since it was first served to me during breakfast, it will always be a breakfast recipe to me.

Sweet Potato and Sausage Hash

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

Enjoy a healthy, paleo-inspired breakfast with this sweet potato and sausage hash.


  • 2 large sweet potatoes (washed and diced)
  • 1 large yellow onion (diced)
  • 2 tbsp minced garlic
  • 1 cup baby bella mushrooms (chopped)
  • 1 lb turkey sausage
  • 2 tbsp extra virgin olive oil
  • 1/4 cup vegetable stock
  • 2 tsp paprika
  • 1 tsp chipotle cayenne pepper
  • salt & pepper to taste
  • avocado, sliced for serving


  1. In a large sauté pan, brown turkey sausage over medium heat. Remove with slotted spoon into separate bowl, set aside.
  2. In the same pan, heat 1 tbsp of olive oil over medium heat.
  3. Add diced onion and garlic and cook until fragrant and onions are soft.
  4. Add sweet potatoes followed by the remaining 1 tbsp of olive oil along with the paprika, cayenne pepper, salt and pepper. Toss to coat. Add in chopped mushrooms.
  5. Let cook on medium heat for 8-10 minutes. Reduce to medium-low heat and add vegetable stock. Cover and let simmer for an additional 10-12 minutes, stirring occasionally.
  6. Once sweet potatoes are tender, add in the turkey sausage and let cook together for an additional 2-3 minutes.
  7. Serve with with sliced avocado.
