I’m that girl who cannot move onto lunch food until I’ve had a proper breakfast. For the past 2 months we’ve been enjoying a healthy, paleo inspired breakfast with this sweet potato and sausage hash recipe in the mornings (often times with a fried egg on top).
It was introduced to me on our ski trip back in January by my brother’s girlfriend, Tessie, who made it for the whole group one morning. Like I mentioned above, I typically enjoy it with a fried egg on top and love when the yolk smothers the sweet potato. When you’re in a rush or simply not feeling the egg, the breakfast hash is just as yummy by itself or topped with some sliced avocado. What I love most about this sweet potato and sausage hash recipe is that it makes a lot of food. I’ll make it on a Sunday morning and get to enjoy it for another 3-4 days throughout week for breakfast (and sometimes lunch). It’s the perfect meal-prep Sunday recipe.
All together, I’ve been on a really big sweet potato kick. I know it’s a conflicted issue in the paleo world if they should be allowed on the diet or not because of the natural sugars, but since I’m only dabbling in paleo recipes, I definitely don’t adhere to that rule. I think by adding the turkey sausage it boosts the protein and creates a more balanced meal (though I do stick in a few more pieces of sweet potato when I’m plating for myself). For me, I love it because it’s naturally gluten free and dairy free!
I’m planning on sharing in an upcoming post how I order my groceries online, but every week on my list is sweet potatoes, yellow onion, 1 pound of turkey sausage and avocado. Honestly, we’ve eaten this for dinner a few times as well but since it was first served to me during breakfast, it will always be a breakfast recipe to me.
