We’re taking Wisconsin comfort food and elevating it to the next level with this Sweet Potato Tot Casserole complete with homemade vegan cream of mushroom soup.
I have always said, if I was on death row & had to choose my final meal it would be my Mom’s tater tot casserole. That’s a serious commitment right there that I’d want my final bites to be something as simple as a tater tot casserole, but I have loved this recipe since I was a little kid.
I’ve made my Mom’s version of this recipe for some of my California friends & family and they immediately give a slight chuckle when I tell them what I’m making because it fits the Wisconsin stereotype that we love our meat and potatoes. Well … we do. That and beer, along with cheese curds. Hey, we aren’t complicated creatures! I think it comes down to the word “casserole,” they don’t seem to use it out here on the West Coast. Boy are they missing out!
Ever since I went dairy free almost 2 years ago, I haven’t eaten my Mom’s tater tot casserole because it calls for cream of mushroom soup. I may have even begged her to not make it when I’m visiting back home because I didn’t want to be tempted. It wasn’t until I teamed up with Wayfair for their Heritage Meals campaign that it finally got me to figure out how I can make this recipe to fit my dietary lifestyle.
I did some research and landed upon Hot For Food’s vegan cream of mushroom soup. It takes a bit more time than just opening up a can of soup, but I tell you what, the flavor is SO MUCH better and well worth the manual labor. I really wanted to elevate the tater tot casserole and I decided to not only make my own cream of mushroom soup, but I decided to switch out the basic tots for a sweet potato version.
Guys … I might have struck gold!
The sweet potato tot casserole starts with seasoned ground beef on the bottom, followed by a layer of sweet corn niblets, a few layers of sweet potato tots and a heavy drizzle of the vegan cream of mushroom soup. Once baked and served fresh from the oven, it’s absolutely delicious. Sorry Mom, but it might be even better than I remember it.
With our weekend plans being covered by constant rain showers, this will make the perfect comfort food day after day as I binge watch my Netflix and Amazon Prime shows. Oh and this new version of the tater tot casserole pairs nicely with a white wine (how very west coast of me).
