This is a PSA (public service announcement) — if you haven’t tried a Thai Beef Noodle Salad then you need to make this your next meal. I have a crazy obsession with noodle dishes lately. Like I seek out restaurants that have one on the menu and then ask them to add extra noodles crazy. Instead of waiting until the next time I eat out, I thought why not combine my love of filet mignon (I am a born & raised Wisconsin girl) with my obsession of Asian noodles?
You didn’t think I was talking about spaghetti noodles did you?
Though I’m not sure my Thai Beef Noodle Salad recipe is overly healthy simply due to my heavy hand of noodles, it does pack a ton of flavor and one that will keep you coming back for more. I love the sweetness of the added mango chunks combined with the spiciness of the hot chili paste. Don’t be alarmed though, everything balances out nicely and it’s really not a “spicy” dish!
