Enjoy this delicious, healthy tuscan tomato bisque made right from your Vitamix. It doesn’t contain any dairy or gluten, just need to have a love for roasted tomatoes!
If you’ve read some of my past recipe posts or follow me on snapchat (@modishandmain), you’re well aware of my love for the Vitamix blender. If you haven’t used yours yet beyond making fresh smoothies, then I truly challenge you to try this simple, yet incredibly delicious tuscan tomato bisque.
This has been one of those recipes that we tried years ago when we first got the Vitamix and absolutely loved it. We claimed we were going to make this all the time. Just like most things we do, we completely forgot about it beyond a mention or two of “yeah we should make that tomato soup again.” Finally, about a month or so ago I ran up to Whole Foods, grabbed the ingredients, came home and whipped up this tuscan tomato soup for the both of us. Of course, this time around I had to tweak the recipe a bit to omit any heavy cream as I needed it to be dairy free. Funny thing is, this bisque DOES NOT need any dairy or dairy substitute. By just using fresh ingredients you’re able to create a thick, flavorful soup that you’ll come to love. Trust me, we made 4 times in one month!
I’m also willing to bet that you love to have either warm garlic bread or crispy crackers to dip in your soup. Since changing my diet to gluten free a year ago, I’ve found that finding a good gluten free bread or cracker is really difficult. Thankfully, I was walking through my Whole Foods down the street and Jill from Jilz Crackers was handing out samples of her gluten free, vegan, paleo friendly crackers. Guys…. they are SO GOOD! Say goodbye to “cardboard” crackers and get yourself a box of these bad boys. I dipped some of the tuscan seasoned crackers in my tomato bisque & was one happy girl. Even Sean, who doesn’t need to eat gluten free, grabbed a handful and loved them. Check your local markets or visit her store locator online to get your hands on a box OR you can simply order them from the website as well.
A delicious, healthy tuscan tomato bisque made right from your Vitamix blender. Recipe is dairy free and gluten free.
Ingredients
- 12 medium size tomatoes
- 1 garlic head
- 1 yellow onion
- 1 tbsp thyme
- 1 1/2 tbsp freshly chopped basil
- 2 tbsp lemon juice
- 1 tbsp agave or honey
- 1/4 cup extra virgin olive oil
- 1/8 tsp cayenne pepper
- pinch of salt and pepper, to taste
Instructions
- Preheat oven to 400°. Line a large baking sheet with tin foil and parchment paper.
- Quarter the tomatoes and the onion and place in large bowl.
- Add thyme, fresh basil, lemon juice, honey, cayenne, salt, pepper and olive oil to the bowl and gently combine all ingredients until tomatoes and onions are nicely seasoned.
- Drizzle head of garlic with olive oil and rub throughly till well coated.
- Place tomatoes, onions and seasoning on the large baking sheet with the garlic head.
- Cook for 45 minutes.
- Promptly remove from oven and scoop all ingredients into the Vitamix blender. Blend on high for 1-2 minutes. Add more salt if needed. Blend.
- Pour directly into serving bowls and garnish with fresh basil leaves if desired.

With Spring finally here, we’re destined to get rainy days and there is nothing better than a warm bowl of homemade tuscan tomato bisque and hearty crackers. I hope you enjoy this recipe as much as we do!

This would easily serve 4 people as their meal. If it’s just a starter and you’re serving slightly smaller portions, then it would serve more. We make it for 2 people as our meal and have plenty for leftovers. Hope this helps!

Does the whole head of garlic get put in the Vitamix with the skin on??
I roast the whole head of garlic with the tomatoes and then before putting it in the Vitamix, I pop out the garlic cloves from the skin. They should squeeze right out.

Yum!! I added just about 1/4 cup of half and half to make it a little more creamy. It is delish and very fresh tasting! It made 8 small bowls of tomato soup for my family. We had it with French Bread and a fresh salad on the side. Great lunch!

Can you give an approximate weight for 12 medium tomatoes?
This soup is very easy to make and so delicious. I used tomatoes, onions, and basil from my own garden. It does not need any dairy. It’s think enough on its own. I will make this again.
